🥣 Immune-boosting garlic & ginger soup



Ingredients:

1 tbsp olive oil or coconut oil

1 yellow onion, chopped

3–4 garlic cloves, finely chopped

1 piece fresh ginger (about 3 cm), grated

1 tsp turmeric (fresh or powdered)

1 tsp ground black pepper

1 carrot, grated

1 quart vegetable or chicken broth

1 tbsp lemon juice (freshly squeezed)

1 tsp honey (optional, to soothe a sore throat)

Salt to taste

Fresh parsley or cilantro for topping

Optional additions:

Chili (to open sinuses)

Coconut milk (for creaminess)

Spinach or kale (for extra nutrition)

Chicken pieces (if you want a heartier soup)

👩‍🍳 Instructions:

Heat Heat the oil in a saucepan. Sauté the onion, garlic and ginger until the onion is soft.

Add the turmeric, black pepper and carrot. Sauté for a few minutes.

Pour in the broth and let the soup simmer for 10–15 minutes.

Season with lemon juice, possibly a little honey and salt.

Blend the soup until smooth if you like, or leave it chunky.

Top with fresh herbs before serving.
